Since its opening in 1979, the Captain’s Table has earned a respected reputation for its home-style food offerings. Known for her fresh ingredients, consistent flavor and affectionate service, owner Doris Lynch developed a loyal following – particularly with those who love her wildly popular chicken with slippery dumplings, sherry-scented oyster stew, jumbo sea scallops and littleneck clams.
In 2012, Lynch opened the doors of her kitchen to Chef Jason Dietterick, an accomplished and willfully independent young chef with training from the Culinary Institute of America. Together, they’ve created unmatched twist to quintessential, home-style American dishes, enlivening them with healthy ingredients and bold flavors but retaining their classic appeal.
The upgraded Captain’s Table, acquired by the Graceland Hospitality Group, offers a taste of nostalgia, but now with a modern flair that will appeal to younger generations.
Chef Jason, who is known for his versatile approach that lends a bold zest to his creations, brings to the table experience at at several top Delaware restaurants including Nage (Rehoboth Beach), BlueCoast Seafood Grill (Bethany Beach) and Stone Balloon Winehouse (Newark). He envisions transforming Captain’s Table into a place that — besides serving American favorites —tells the story of the region’s culinary history.
"When locals and tourists come in here, we want to nourish them with memorable food and fun culinary facts that will help them make an even stronger connection to this wonderful cuisine that we’ve come to know as 'comfort food,'" he says.
